2023 Truffles Sauvignon Gris: Lemon rind, lime and spicy wildflower aromatics on the nose lead to a bright citrus and spicy fruit-driven palate showing great tension and drive.

The wine: The grapes were hand selected and whole bunch pressed before being split into stainless steel (60%) and old French barriques (40%). Fermentation with indigenous yeasts took 2.5 months at 14-21°C followed by maturation on yeast lees for 5 months. The barrels and tank were racked together and filtered for brightness, clarity and balance.
