Paddons Paddock Bubbles 2022

The inaugural 2021 Bubbles was a stand out success with the only problem being that we didn’t make enough! So here it is again, back by popular demand and even better than the first edition.

2022 Bubbles – Apple and brioche aromatics leading to the formation of a fully textured freshness. A richness in flavour with hints of the tropics generates especially quaffable bubbles.

The wine – An unlikely camaraderie between two polar opposites, Pinot Noir and Chardonnay grapes combine to create a pleasant and undeniably flavoursome brut. A wine commonly associated with celebration makes it a Kiwi favourite in an abundance of situations. Paddons Paddock bubbles are plagued with a wealth of bright apple and smooth brioche aromatics leading to a persistent, fresh, and flavoursome palate.

Story – Paddons Paddock bubbles are a product of Jackie’s ever-growing desire and Christopher’s can-do attitude. Jackie the mother of the Paddon family has always had a love for bubbles bringing the idea of Paddons Paddock bubbles to life. Jackie wanted to craft a wine specific to her taste buds and with the right supply of grapes on hand, Chris was adamant he could make it happen.

It would not be a quick process, in fact, it would be a process that spanned over multiple years. Family and friends gathered at the family estate in 2022, handpicking each grape with love before they were sent to Dean Shaw for preparation. The grapes would then embark on the next step of their journey. They would head to Marlborough for two and a half years and undertake the method traditional. All of this preparation would lead to the present day, where the Paddons twist on a French icon is ready to be sipped, shared and enjoyed.
